The Cangshan team conducted 16 months of research and development to finalize the industrial-Grade carbide sharpening components. This ensures the effectiveness of this knife sharpener on high alloy metal blades.
This professional 3-1 knife sharpener has a built-in angle adjustment ranging from 14 to 24 degrees. It offers the correct blade angle for maintaining the cutting edges of both Western- and Asian-style knives. Additionally, it has a unique ceramic sharpening blade slot specifically designed for sharpening 2-Piece kitchen shears.
The sharpener has two stages of sharpening for each knife style. It includes a coarse ultra-hard Tungsten carbide side for restoring dull blades and a finely grained ceramic side for honing and finishing edges. The ceramic side is also useful for quick touch-ups.
With its unique handle-shaped grip, the sharpener ensures finger safety. It also has a nonslip rubberized base that provides stability on the work surface.
Please note that this sharpener is not suitable for serrated knives or blades sharpened on only one side of the cutting edge, such as sashimi knives.
